If snacking were an Olympic sport, it’s pretty safe to assume that I’d win the gold medal.
And I’ve got my game face on. It’s football season and I’m ready to eat the best homemade game day food on planet earth, including this insanely delicious Chipotle Gouda Queso Dip.
Now, you guys know I’ve always loved and eaten the heck out of anything and everything that involves spiciness. Not to mention the fact that I’m mildly obsessed with the queso blanco dip you get from most Mexican restaurants. Who isn’t? I haven’t had it in several months, but it’s one of those things you don’t forget the taste of.
Anywho, I came up with the idea to use Boar’s Head Chipotle Gouda Cheese in my next batch of queso, because I am so in love the the flavor. It’s slightly nutty, sweet, salty, and sharp notes, but it’s also got a splash of heat from the chipotle.

Now, about this queso dip. I have to say that it is some of the best I have EVER had. I’m not pulling your leg. I mean it. And it is super easy to make! I’ve tried several recipes for queso and none have been as easy and simple as this one.
Finally, a healthy queso dip I can get excited about.
Here’s the recipe:
- 2 (8 oz.) packages cream cheese, cubed
- ¼ cup fresh salsa
- 1 lb. Boar's Head Chipotle Gouda Cheese, sliced and cut into small squares
- ¼ cup milk
- Add the cubed cream cheese to a medium saucepan on medium heat. Stir frequently, until the cream cheese is almost completely melted. Add the salsa and stir until combined.
- Stir the Boar's Head Chipotle Gouda Cheese into the mixture and continue to stir until completely melted. Add the milk to thin out and stir until queso is smooth, but not stringy. Serve while hot with tortilla chips or crackers.
