Between harvesting our summer crop, planting our fall/winter garden, school starting up, doing family activities, and visiting with family members…I’ve been super busy lately. And not only do I feel like I don’t have enough time to make something sufficient in the mornings, I feel like there’s nothing to make. Well, there’s oatmeal, but no one in my family actually enjoys eating oatmeal.

Today I knew I wanted to make muffins. It was on the menu plan after all, yet I was unsure about which kind of muffin to make. I forgot to freeze local berries this summer, so blueberry, strawberry, and mixed berry muffins were out of the question. So then I went over to 100 Days of Real Food and looked at a few choices. After a tough decision (and a cup of coffee), I figured I would make whole wheat pumpkin muffins.

Whole Wheat Carrot Muffins

Hearty and moist, these whole wheat carrot muffins make for the perfect breakfast. They’re naturally sweetened and super easy to make!

When I don’t know what to make for breakfast, I usually make one of two things.

Oatmeal or muffins. As you can imagine, I tend to opt for the latter. You can’t beat the simplicity of oatmeal (or how cheap it is), but you can’t beat the flavor, convenience, and heartiness of muffins.

I’m not gonna lie. I used to think that people only made muffins with whole wheat flour if they wanted to play hockey with ‘em. Obviously, now that I primarily use whole wheat flour for baking and cooking, my views have changed. Because I know how moist, hearty, and filling a muffin made with whole wheat flour can be.

Spiced Carrot Muffins

Ahhh.

There’s nothing better than biting into a delicious, healthy muffin that tastes like fall. Nothing better. The sweetness of the carrot put together with the bold spices of autumn are something that will satisfy any sweet tooth, health nut, or hungry teen.

I think fall is my favorite season. The cool breeze that blows by, tossing around orange, red, and yellow leaves, creating a scene that is, in a way, magical. Almost every recipe including carrot, sweet potato, pumpkin, or apple. The pears on the pear tree clunking their way down to the ground without any beckoning, other than the duties given to it by mother nature. The sweet spices such as nutmeg, cloves, allspice, ginger, and cinnamon give taste buds something to look forward to. Not to mention the blissful carrot muffins you can enjoy all season long.
