Water Kefir
Prep time:
Total time:
A delicious probiotic-packed beverage.
  • ¼ cup hydrated water kefir grains
  • 1 gallon spring water or well water
  • ¾ cup unbleached pure can sugar or rapadura/sucanat
  • ½ of an eggshell, optional but highly recommended
  • 1 tablespoon molasses, optional
  1. Add 1 cup spring water to a saucepan. Add unbleached pure cane sugar, rapadura/sucanat, or other sweetener of your choice (not honey), turn the heat to medium, and stir until dissolved.
  2. Pour the sugar water into the gallon jar.
  3. Next, fill the jar about halfway with spring water. Measure out 1 scant tablespoon of molasses (if using) and pour it into the jar. Stir well.
  4. Add the water kefir grains and half of a clean eggshell to the jar.
  5. Add more water until it’s up to the shoulder of the jar. Cut a piece of cheesecloth a god bit bigger than the mouth of the jar and secure it over the top of the jar with a rubber band.
  6. Let sit in a room temperature spot away from other cultures for 2 to 5 days, or until it has reached the desired sweetness and fizzyness.
