Whole Wheat Avocado Brownies

A healthy and decadent chocolate brownie.
Ingredients
  • 1 medium avocado
  • 3 medium eggs
  • 1 cup whole wheat flour
  • ½ cup cocoa powder
  • ⅓ cup hot water
  • 1 tablespoon vanilla extract
  • ¾ cup vanilla yogurt
  • ¼ cup unbleached pure cane sugar
  • ¼ cup organic honey
  • 3 tablespoons dark chocolate chips
Instructions
  1. Preheat your oven to 350 degrees F. In a medium bowl, combine the egg, avocado, and yogurt.
  2. Using an immersion blender or a hand mixer, mix on high speed for about 1-2 minutes.
  3. Now add the vanilla extract and the sugar. Mix again until combined.
  4. Now put the cocoa powder in a smaller bowl. Add the water to the cocoa powder. It should be runny like icing. If it’s too thick, add more water a tablespoon at a time.
  5. Add the cocoa powder/water mixture to the avocado mixture. Mix well.
  6. Add the honey and the whole wheat flour to the avocado mixture. Mix it until it’s completely combined.
  7. Grease a 8 x 8 inch baking dish and pour the batter into it. Make sure the batter is evenly spread.
  8. Sprinkle the dark chocolate chips on top. Bake for 25 – 30 minutes. Once baked, place the pan in the fridge for another 30 minutes to cool. Serve.
Notes
Make sure that you have ripe avocados, otherwise you’ll end up with avocado chunks in your brownies. Also, scoop the avocado out of the peel before you dice it.
