So simple and delicious! Chocolate chia seed pudding is sure to be a favorite.
Ingredients
2½ cups coconut milk (preferably homemade)
½ cup chia seeds (I use these)
6 Tbsp cocoa powder
⅓ cup unbleached pure cane sugar
½ tsp vanilla extract
a pinch of salt
Instructions
Combine all ingredients in blender or food processor. You can blend up the chia seeds first if you want, or you can add them after all of the other ingredients are mixed up. Blend until smooth.
Let the pudding sit on the counter or in the refrigerator for 10-15 minutes. (You can leave it in there for an hour if you prefer your pudding to be chilled.) Serve and top with coconut shreds or chia seeds.
