Cinnamon Vanilla Chia Seed Pudding

- 1 cup milk (cow, goat, almond, rice, or soy are all great choices)
- 3 tablespoons chia seeds, black or white
- 1½ tablespoons sugar
- 1 teaspoon pure vanilla extract
- ½ teaspoon ground cinnamon
- a dash of salt
- Stir together all ingredients in a small bowl; refrigerate overnight or until it reaches your desired thickness, stirring occasionally.
