Healthy Blueberry Cranberry Muffins

  • 2 cups unbleached all-purpose flour
  • ½ cup organic pure cane sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 egg
  • ¾ cup plus 2 tablespoons milk
  • ⅓ cup vegetable oil
  • ½ teaspoon pure vanilla extract
  • ⅓ cup dried blueberries
  • ¼ cup dried cranberries
  1. Preheat oven to 400° F. Grease or line a muffin pan. Set aside.
  2. In a small bowl, combine the flour, sugar, baking powder, and salt.
  3. In a large bowl, beat the egg, vanilla extract, milk, and oil. Add dry ingredients to wet ingredients until combined. Fold in dried blueberries and cranberries.
  4. Bake for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack.
