Pumpkin Spice Dutch Baby Pancake

  • 4 large eggs
  • ¾ cup whole milk
  • ¾ cup all purpose flour
  • 2 teaspoons organic maple syrup
  • 1 teaspoon pure vanilla extract
  • 1½ teaspoons homemade pumpkin pie spice
  • 2 tablespoons unsalted butter
  1. Preheat oven to 425 F.
  2. In a blender, combine the eggs, milk, flour, maple syrup, vanilla extract, and pumpkin pie spice. Blend until smooth and completely combined.
  3. Place the 2 tablespoons of butter in a 12-inch cast-iron skillet and place in the oven for 3 minutes or until the butter is completely melted.
  4. Remove the pan from the oven and immediately pour the batter into it. Then quickly return the pan to the oven. Bake for 20-22 minutes, or until the pancake is golden brown and puffed around the edges.
