Easy Garlic Mashed Potatoes

Ingredients
  • 4 medium baking potatoes
  • 1 teaspoon salt
  • 4 tablespoons (1/2 stick) salted butter, softened
  • 2 tablespoons heavy cream (or milk)
  • 1 clove garlic, minced
  • ¼ cup sour cream
Instructions
  1. Wash and peel the potatoes. Cut into large, 3-inch chunks and place in a large pot. Fill the pot with enough water to cover the potatoes.
  2. Place the pan oven high heat and bring to a boil. Once boiling, reduce heat to medium and cover with a lid. Simmer the potatoes for 20-25 minutes, or until a fork can easily go through them.
  3. While the potatoes are cooking, toss the minced garlic into a small frying pan and saute them over medium heat. Set aside.
  4. Drain the potatoes into a colander. Transfer the cooked potatoes to a medium bowl.
  5. Using a potato masher or a fork, mash the potatoes to the desired consistency. Add in the salt, heavy cream, sour cream, and butter. Stir to combine.
  6. Do a taste test. Add more heavy cream and salt to your liking. Stir and serve.
