Cinnamon Maple Sweet Potato Bites

Crispy on the outside, tender on the inside, and PACKED with that comforting "cinnamon roll" flavor. They're so easy to make and are actually healthy for you!
Ingredients
  • 4 medium sweet potatoes
  • 3 tablespoons melted butter
  • ½ teaspoon cornstarch
  • 2-3 tablespoons maple syrup
  • 1 teaspoon cinnamon
Instructions
  1. Preheat oven to 425° F. Line a baking sheet with parchment paper or foil and set aside.
  2. Peel the sweet potatoes and cut them into bite-size cubes with a sharp knife. Place the cubes in a gallon-sized bag and drizzle in the melted. Seal the bag and give it a shake to coat all of the pieces in the butter.
  3. Add in the cornstarch, cinnamon, and maple syrup. Give the bag another shake and then transfer the bites to the prepared baking sheet. Try to make sure they aren't stacked on top of each other, so put them all in an even layer. (You may need two pans.)
  4. Sprinkle with extra cinnamon if desired and place the pan in the oven 25-30, stirring the bites about halfway through the baking time.
  5. Take the bites out of the oven and let them cool for about 5 minutes before eating. Not only will this keep you from burning your taste buds into oblivion, but it will also give the bites another chance to crisp up.
