Vegan Chocolate Avocado Pudding

- 2 large avocados, peeled and pitted
- ½ cup unsweetened cocoa powder
- ½ cup pure cane sugar
- ⅓ cup coconut or almond milk
- 2 teaspoons vanilla extract
- Dice the avocado and combine all ingredients in a blender or food processor. Blend until pudding mixture is completely smooth and creamy.
- Pour pudding mixture into a serving bowl and cover with plastic wrap. Refrigerate for 30 minutes, or until chilled. Serve or store for up to 3 days.
