Vegan Chocolate Avocado Pudding

  • 2 large avocados, peeled and pitted
  • ½ cup unsweetened cocoa powder
  • ½ cup pure cane sugar
  • ⅓ cup coconut or almond milk
  • 2 teaspoons vanilla extract
  1. Dice the avocado and combine all ingredients in a blender or food processor. Blend until pudding mixture is completely smooth and creamy.
  2. Pour pudding mixture into a serving bowl and cover with plastic wrap. Refrigerate for 30 minutes, or until chilled. Serve or store for up to 3 days.
