Stone-Ground Yellow Corn Grits

A simple breakfast that couldn't be more frugal!
Ingredients
  • 4 cups water
  • 1 cup organic stone-ground yellow corn grits
  • ½ teaspoon salt (optional)
  • a dash of pepper (optional)
Instructions
  1. In a medium saucepan, bring the water to a boil. Whisk the grits into boiling salted water or stock, turn it down to a simmer.
  2. Cook about 20 minutes, stirring from time to time with a whisk or wooden spoon. Once grits are creamy and all water is absorbed, serve and enjoy.
Notes
If you're not worried about your grits being vegan, I love to top my grits with shredded cheddar cheese and substitute milk for some of the water. This results in creamier grits. Another variation is to omit the salt and pepper and sprinkle pure cane sugar over the top of the grits once served.
