These easy chocolate covered strawberries take less than 20 minutes to make and taste absolutely heavenly. Just 4 ingredients are all you need to make this tasty chocolaty treat!
A few weeks ago, my family and my aunt went to a strawberry farm to pick strawberries. Because what else would you do at a strawberry farm.
So we picked 4 gallons. Four flippin’ gallons of strawberries, you guys!!! One gallon went to my aunt and the other three came home with us.
I’ve been wanting to make chocolate covered strawberries for the longest time, but our garden never yields enough strawberries at a time to make enough for my family. So I FINALLY got to make them and I am so excited to share the recipe with you because it is SUPER easy and you only need four ingredients!
You start by washing the berries and making sure they are completely dry. If your strawberries aren’t dry enough, the chocolate/coconut oil mixture won’t stick very well to the strawberries. And we don’t want that.
Then you melt 3/4 cup of semisweet chocolate with 1 teaspoon of coconut oil and 1/2 teaspoon of vanilla extract in a double boiler (you could also easily do this in a microwave by heating it in 30-second bursts and stirring in between each burst). Melting chocolate in a double-boiler is the best to way to make sure your chocolate won’t get burnt. But if you don’t have one (or don’t feel confident using it), I would go the microwave route.
After that all you have to do is dip the washed berries in the chocolate mixture, place them on a cookie sheet lined with a silpat or parchment paper, and pop the pan in the freezer for 10 minutes.
If you want to create the fun drizzles, simply melt a little more chocolate (regular or white chocolate) and drizzle it over the strawberries with a spoon. Chill it for a couple of minutes and serve!
Or, if you’re making these ahead of time, place them in a Pyrex container and pop them in the fridge until you’re ready to serve. They’ll keep for about 3-5 days in the fridge, or if you freeze them, they’ll last for 3 months. So you can have a summery treat in the fall if you want!

Here’s the recipe:
- 1 pound strawberries
- ¾ cup (6 oz.) semisweet chocolate
- 1 teaspoon coconut oil
- ½ teaspoon pure vanilla extract
- Wash the strawberries and pat them dry. Line a baking sheet with a silpat or parchment paper. Set aside.
- In a double-boiler, heat the semisweet chocolate, coconut oil, and vanilla extract until the chocolate is melted and smooth, stirring frequently.
- Dip the strawberries, holding them by the leaves, in the chocolate mixture and place on the prepared baking sheet.
- Place the chocolate covered strawberries in the freezer to set for about 10 minutes. You can serve at this point or melt some additional chocolate and drizzle it over the top.
Microwave method: Heat the semisweet chocolate in 30-second bursts, stirring in between each burst, until smooth and melted. Be careful not to burn the chocolate.

Just curious as to why you add the coconut oil? A lot of recipes don’t include it so I thought it was interesting. Does this change the consistency/taste of the chocolate?

Good question Whitney! The coconut oil just helps the chocolate to harden faster, and while it isn’t necessary, it is recommended because it helps to save time. Also, it doesn’t affect the flavor or consistency of the chocolate at all!
