I can’t be the only one who constantly struggles with low energy and random hunger strikes. And when I’m hungry, I want to just be able to open the fridge, grab something, and eat it without having to cook for 20 minutes. So these healthy peanut butter chocolate energy bites are a quick way to get some much-needed energy. Besides, everyone knows peanut butter and chocolate are a match made in heaven.
I created this recipe on a whim. I was originally going to make these no bake peanut butter chocolate oatmeal cookies, but I didn’t have any cocoa powder. So I decided I would have to alter the recipe a bunch. I used a lot of the same basic ingredients, but I added flax seed meal and subbed in honey instead of sugar.
The ingredients for these delicious energy bites are simple: old-fashioned oats, flax seed meal, chocolate chips (mini), peanut butter, honey, and vanilla extract. In a nut shell, you just mix up the ingredients in a bowl, roll them into balls, and refrigerate.
It only takes me a few minutes to whip these bad boys up and put ’em away. One of the things I love about these peanut butter chocolate energy bites is that they are really low mess. I mean, all I gotta wash is a few measuring cups, a bowl, and a spatula.
If you are a vegan, you can easily substitute maple syrup for the honey. You can also add a pinch of cinnamon to give the energy bites a little more depth. If you find that they are too sweet for your taste, you can use 3 tablespoons of honey (or maple syrup) as opposed to 1/4 cup.
I generally make these energy bites once a week, eating 2 a day, or whenever my energy level is way low. It’s a quick snack/treat that I can feel good about eating.
Here’s the recipe:
- 1½ cups old-fashioned oats
- ½ cup flax seed meal
- ⅓ cup mini chocolate chips
- 1 cup creamy peanut butter
- ¼ cup honey
- ½ teaspoon vanilla extract
- Combine oats, flax seed meal, and mini chocolate chips in a large bowl.
- Add peanut butter, honey, and vanilla extract. Using a wooden soon or rubber spatula, stir until thoroughly combined. The mixture will be very thick.
- Shape the mixture into tablespoon-sized balls. Transfer the balls to an airtight container, separating each layer with wax paper. Store in the refrigerator until ready to eat.
