The past few days, we have been doing a lot of walking. I swear I’ve walked 10 miles. At least, that’s what it feels like. We’ve also been doing a lot of blackberry picking. We must have picked 6 cups of blackberries. But that’s beside the point. The point is that at the end each day, I was exhausted. So dinner was going to have to be something that we could make in less than 30 minutes (because it was already 6:30) and something that would revitalize us and give us some kind of energy. So I looked at what I had in the cabinets—some whole wheat elbow noodles—and then I checked the fridge—milk, cheese, some butter—and these things gave me the idea to make macaroni and cheese. The only problem was…I hadn’t made macaroni and cheese in a really long time.
Whole Wheat Baked French Toast
There is no breakfast my mother loves more than baked french toast. I’m just glad it’s easy to make, considering she requests it every other week! I feel like the best part about baked french toast is that you can make it ahead of time.
That’s why I usually make a batch of it a few days before Sunday (so we can have it for Sunday brunch) and that way, I can make it when I’m not busy and make it without feeling rushed. And believe me, there is nothing that I dislike more than feeling rushed.

As the days get hotter and hotter, baking popovers for snack won’t really cut it anymore. Nowadays, if I can avoid baking, I’ll do it. No bake foods and cool treats are on the menu for me. I am an Asian food lover all the way. But once we started eating healthier, it meant no more trips to the Chinese Buffet or the Hibachi Grill, no more Ramen noodles, and definitely no more frozen Asian food from the supermarket. Sure, I miss it sometimes, but when I can make something so delicious, so amazing at home, I think I might be able to cope with the changes. Even the kids like it! They eat the whole bowl of it, broccoli, bamboo shoots, and all. What’s not to love?
Our 2014 Garden
So much of the food my family eats is produce, and because of that, most of our grocery bill each month comes from produce items. It became apparently clear that if we wanted to eat as much produce as we do and make sure that it was 100% organic, we had to grow it ourselves. Well, let me just tell you, when you have to grow enough produce for 10 people, your garden has to be pretty large. And believe me when I tell you that our garden in really big. About 3 years ago, we started our first garden and it consisted of 3 tomato plants. Three! Of course, back then we were eating Stouffer’s and Kraft Macaroni and Cheese all the time, so a large garden wasn’t necessary. In the summer of 2012, we moved to a new house with a very large yard and in the spring of 2013, my dad built us a very large garden in a spot in the yard that gets sun basically all day long. It was the perfect spot.
With the expansion of our garden, we realized the importance of having ample space not just for our produce but also for our family to thrive. The move to a new house with a spacious yard was pivotal in enabling us to cultivate our own organic bounty.
