For my sister’s birthday, I made her an amazing breakfast. And she loved it. I made her whole wheat chocolate chip muffins and they were slammin’. I mean, I don’t understand how one could say they don’t like muffins or chocolate after eating one bite of these muffins. Oddly enough, I had a roughly hard time finding a good whole wheat chocolate chip muffin recipe, but I DID find one!
Whole Wheat Vegan Chia Seed Pancakes
I do not know what I would do if I didn’t have an awesome pancake recipe to fall back on when I have no creative juices, my eyes are juuust open, and I haven’t even thrown a splash of coffee down the ol’ hatch. But today, I had to be a little creative because a) we were out of eggs, b) we were out of sugar, and c) I knew people were going to want an amazing breakfast this morning due to the fact that they were “punished” with oatmeal yesterday.
No-Bake Chocolate Peanut Butter Oatmeal Cookies {Gluten-Free}
I’ve got to tell you, gluten-free cookies are quite an amazing thing, especially when you’ve got an immense craving for chocolate and you know you shouldn’t go down to Bi-Lo and pick up a dozen chocolate chip cookies because that would be bad.
These cookies are truly amazing. Gluten-free means no wheat-belly guilt, chocolate obviously means heaven, and peanut butter means heaven times two. And they’re no-bake? Things just got ten times better!
Usually when you make cookies that have to bake in the oven, it takes FOREVER and they have a high-likelihood of burning and or being under-baked. Not with these cookies though!
Buttermilk Biscuits and Sausage Gravy
My family loves buttermilk biscuits with a passion. It’s definitely something they ask for on a regular basis. But what they love ten times more than a buttermilk biscuit is when I make sausage gravy to go on the side, or in the middle rather. If you live in the south, you know what all the hullabaloo is about. I mean, it’s a breakfast to die for. It’s simplicity amazes me and the flavors are out of this world good. And when you use quality meat, I don’t think there was ever a more perfect breakfast. If someone asks what I’m making for breakfast and I say biscuits, then they’ll say “With gravy, right?” This is typical. Very typical.

Ever since we started the whole “healthy eating” thing, I haven’t been able to enjoy a nice, large bowl of chex mix. You wanna know how many times I’ve walked down the aisles of various supermarket’s and yearned for *just* a handful of the stuff?
I mean, it’s just so freakin’ delicious! But it’s one of those that you can want but never have. With ingredients like Maltodextrin and Disodium Guanylate, I think I’ll just make my own chex mix and skip the artificial ingredients.
