Vegan Coconut Oatmeal Cookies { + A Giveaway!}

I would say I’ve been on a bit of a vegan kick lately. A vegan sorbet, vegan pudding, vegan milk, vegan pancakes…the list goes on and on. There’s just something about making food without eggs, milk, or other dairy products that fascinates me. Luckily, there are all kinds of ingredients you can use to replace eggs and dairy products. Sometimes I use coconut oil to replace butter, chia meal + water to replace eggs, coconut milk to replace milk, and lots more. A few days ago, I wanted to make some oatmeal raisin cookies, but we didn’t have any butter or raisins (how bunk is that) so we had to do a little bit of improvisation. The result? Vegan coconut oatmeal cookies made with coconut shreds, coconut oil, oats, and a few other baking basics.

Mocha Banana Milkshake | Natural Chow | http://naturalchow.comI finally was able to get my hands on a copy of the Sally’s Baking Addiction Cookbook last week and I am absolutely drooling over every single recipe. Sally is such a talented woman and her recipe developing skills amaze me. So when her cookbook came out the other day, I knew there were going to be tons of recipes that I was going to want to try and I was 100% correct. There’s a whole section in the cookbook with healthier choices, which is where this recipe comes from.

Creamy Whole Wheat Macaroni and Cheese

The past few days, we have been doing a lot of walking. I swear I’ve walked 10 miles. At least, that’s what it feels like. We’ve also been doing a lot of blackberry picking. We must have picked 6 cups of blackberries. But that’s beside the point. The point is that at the end each day, I was exhausted. So dinner was going to have to be something that we could make in less than 30 minutes (because it was already 6:30) and something that would revitalize us and give us some kind of energy. So I looked at what I had in the cabinets—some whole wheat elbow noodles—and then I checked the fridge—milk, cheese, some butter—and these things gave me the idea to make macaroni and cheese. The only problem was…I hadn’t made macaroni and cheese in a really long time.

Whole Wheat Baked French Toast

There is no breakfast my mother loves more than baked french toast. I’m just glad it’s easy to make, considering she requests it every other week! I feel like the best part about baked french toast is that you can make it ahead of time.

That’s why I usually make a batch of it a few days before Sunday (so we can have it for Sunday brunch) and that way, I can make it when I’m not busy and make it without feeling rushed. And believe me, there is nothing that I dislike more than feeling rushed.

You probably don’t like the feeling either. This baked french toast solves all my problems (okay maybe not all of them).

Vegan Raspberry Banana Sorbet

As the days get hotter and hotter, baking popovers for snack won’t really cut it anymore. Nowadays, if I can avoid baking, I’ll do it. No bake foods and cool treats are on the menu for me. That’s why I love making this raspberry banana sorbet. It takes less than 5 minutes to prepare, which I absolutely love, and you literally only need 5 ingredients to make a delicious snack or dessert to help you beat the heat.
