Six months ago, I invested in an appliance that soon became my best friend: The Ninja Mega Kitchen System. It came with a 9 cup pitcher, 8 cup food processor bowl, 2 Single Serve cups, and all the blending attachments for each piece. I use it practically every day to make dough, smoothies, pesto, oat flour, and so much more. It’s the most versatile appliance I own and I don’t know what I would do without it. I love to make smoothies in the morning to give me a burst of energy and nutrition to keep cravings and drowsiness at bay.
You are really going to love this super simple banana coconut smoothie. It’s incredibly smooth, creamy, fruity, and naturally sweetened. The banana and dates sweeten the smoothie enough to make it pleasing and delicious but not overly sweet. You can add more dates one at a time if it is not as sweet as you’d like, but I wouldn’t exceed 5 dates.
I think this smoothie is one of my new favorites. Sure, the kale blueberry and banana smoothie was dreamily delicious and fruity, but this banana coconut smoothie is one of the best smoothies I’ve ever had.
I honestly didn’t think I’d like it all that much because I’m not a big fan of banana, but boy was I wrong. This healthy banana coconut smoothie blew me away.
One of the the things I love most about this smoothie and that I think you’ll really dig is that it takes less than 5 minutes to prepare and only 5 ingredients to make an insanely addictive yet healthy smoothie!
I use Whole Foods brand coconut milk to make this smoothie, although I’ve heard good things about the Thai Kitchen brand. I love the quality of it and how great it tastes. You can substitute homemade coconut milk if you’d like. I would just use a little more than 1 1/2 cups. I do not chill the coconut milk.
Here’s the recipe:
- 1 (13.5 oz) can coconut milk
- 1 frozen organic banana, peeled and cut in half
- 1 oz. dark chocolate
- 2 medjool dates, pitted
- 2 to 3 ice cubes
- Place all ingredients into you blender.
- Blend on high until smooth. Serve immediately.
