I have been craving chocolate a lot lately, and all I want to eat at this point is chocolate, preferably covered in chocolate. So I needed something healthy to satisfy my cravings and I needed something filling so that I wouldn’t have to make and eat 10 servings of it. Luckily, my brilliant mother likes to email me recipes she wants me to try, and Chocolate Chia Seed Pudding was among them. It was exactly what I needed. Can you imagine if I had baked and eaten 24 double chocolate chip cookies on my own? Or worse, bought highly processed ones from the store? I think I made a smart choice that day, because Lord knows it would not have been good for my thighs. This Chocolate Chia Seed Pudding is super rich, absolutely delightful, vegan, simple to make, and only uses a handful of ingredients.

Pudding has always been one of my favorite desserts, especially back when I was younger. The Snack Pack Chocolate Pudding was the best thing since sliced bread to me. I could eat a whole pack of things and would still ask for more. But about a year and a half ago, I was introduced to chia seed pudding and I am happy to say that I have found a new love. I mean, I can’t get enough of this stuff! Yet, in that time, I had only ever made/eaten cinnamon-vanilla chia seed pudding.

Chia seeds are super healthy for you! Chia seeds are full of omega-3′s, fiber, phosphorus, manganese, protein, and calcium. AND they help you get full faster, so you don’t have to eat as much of it to be satisfied.

You don’t have to stand over the stove to make this awesome pudding! All you have to do to make this is throw all the ingredients in the blender and blend until smooth. You can blend up the chia seeds first if you want, or you can add them after all of the other ingredients are mixed up. Then, let it sit on the counter or in the fridge for 10-15 minutes and voila!, you have yourself just about the richest chocolate chia seed pudding on the surface of the planet. However, if you want your pudding to be fully chilled, you can leave it in the refrigerator for an hour or so.

Here’s the recipe:

So simple and delicious! Chocolate chia seed pudding is sure to be a favorite.
Ingredients
  • 2½ cups coconut milk (preferably homemade)
  • ½ cup chia seeds (I use these)
  • 6 Tbsp cocoa powder
  • ⅓ cup unbleached pure cane sugar
  • ½ tsp vanilla extract
  • a pinch of salt
Instructions
  1. Combine all ingredients in blender or food processor. You can blend up the chia seeds first if you want, or you can add them after all of the other ingredients are mixed up. Blend until smooth.
  2. Let the pudding sit on the counter or in the refrigerator for 10-15 minutes. (You can leave it in there for an hour if you prefer your pudding to be chilled.) Serve and top with coconut shreds or chia seeds.

      Hi Rachel! I think that if you use raw goat milk the pudding would be creamier than if you were to use coconut milk (water-based). So yes, I think it would work. Thanks for asking! ;)

    Do the Chia seeds have to be ground up before they will thicken? Im not sure my blender will be able to pulverize them into fine enough consistency so hopefully they will be able to thicken it just like your recipe says.

      Gretchen, do you have a spice grinder or coffee grinder? If so, you can use that to grind up the chia seeds. Chia seeds tend to gel up pretty quickly so if you can’t get the chia seeds ground very much (like mine) it may take about 10 minutes of letting the pudding sit to thicken.
