I don’t know about you but I like my smoothies thick and creamy, not watery and thin. 

Hence why I love using unsweetened canned coconut milk in them. It just takes them to a whole new level of creamy goodness. That’s also why I like to use frozen fruits in my smoothies. It just makes them that much creamier…

But enough about creaminess—let’s talk about this smoothie! (or maybe about how many times I just said the word creamy)

I love the heck out of blueberries. They’re like antioxidant superheroes. And they taste amazing to top it all off. I only use 1/2 cup of frozen blueberries in this smoothie, but you could honestly use more or less depending on your preference.

This past Sunday, we went to church earlier in the day than usual. 

But every week after church, we go to Publix to grab any groceries we need for the week along with flowers for the table. It was my week to make Sunday dinner, and I planned on making gluten free meatloaf with mashed potatoes and garlic butter sauteed green beans. 

Well, less than a minute after leaving the parking lot, we were at a stop light when all of a sudden the car jolted forward and I heard the crunch of glass. We got rear ended. Of course, since we were in an Excursion, none of my family got injured and very little damage was done to the car. Sadly, I can’t say the same for the car that hit us (hint: it was totaled, but the person was…okay).

But maaaan, my head was killing me! In fact, all of our heads were pounding from the whiplash, so we went to the ER to get checked out. As of today, I can’t lift my head because my neck still hurts so badly. I did get an x-ray, so we know nothing is broken, but man it hurts.

When we got home from the hospital, we really wanted some kind of comfort food, and the meal I had planned definitely fit the bill.

Granola is starting to become my favorite breakfast food.

I mean, I can practically whip it up in 5 minutes. Then it bakes for 45 minutes, whilst filling my house with the wonderful smells that granola produces, and then I have breakfast for 3-4 days. And I love those mornings where I can grab a double shot espresso out the fridge, pour milk over a bowl of granola, sit down at the table, and take in the morning.

I also like to start out my day with chocolate. Because chocolate = life, as we’ve already established. 

It was killing me to not mix in chocolate chips to the final product, but I didn’t want to overload it on the chocolate (it kills me to say that). Besides, it’s already mocha flavored.

A few weeks ago, my family and my aunt went to a strawberry farm to pick strawberries. Because what else would you do at a strawberry farm.

So we picked 4 gallons. Four flippin’ gallons of strawberries, you guys!!! One gallon went to my aunt and the other three came home with us. 

I’ve been wanting to make chocolate covered strawberries for the longest time, but our garden never yields enough strawberries at a time to make enough for my family. So I FINALLY got to make them and I am so excited to share the recipe with you because it is SUPER easy and you only need four ingredients!
