Cucumber Salad with Vinaigrette Dressing

One of the main reasons I love summer is because my garden starts producing so much. Another reason is because I can get produce for pretty cheap at a farmer’s market, making this cucumber salad an inexpensive and extremely refreshing side dish. The crisp taste of cucumbers and onion with the juicy tomatoes comes together to create such a beautiful dish to serve alongside sandwiches, burgers, or at a cookout. This easy cucumber salad is super easy to make as well.

    Margaret, this recipe looks a lot like a salad I make during the summer, and sometimes at other times of the year. I think the only difference is that I use a Zesty Italian dressing I make without using too much water, but a bit more vinegar. Seems to make it a bit more tart and tastes so good.
