For the longest time, I was without a waffle maker. Talk about total devastation. Before my last hurrah with my beloved waffle maker, I would wake up early and make waffles while everybody was asleep. Then, when they would wake up, there would be a hot stack of waffles waiting on the table for them. But the good times didn’t last, and my waffle maker broke about 6 months ago. Six months without waffles. I know, right? And then, on one of my thrift store runs last week, I found a beautiful waffle maker sitting on the top shelf, and you can bet I was determined to get it. I am loving my new waffles maker—and these crazy good buttermilk waffles!
These buttermilk waffles are crispy on the outside and tender and fluffy on the inside. They make for an insanely delicious breakfast and I cannot get enough of them. My family loves these waffles and the way it makes the house smell in the early morning hours. I’m sure your family will love it as much as mine did if not more.
You can use a traditional waffle iron (like this one) or a Belgian Waffle Maker (like this one). If you’re using a Belgian waffle maker, keep in mind that the recipe will make 5 Belgian waffles.
I used the buttermilk from last week when I made my own butter, but buttermilk from the store will work perfectly for this recipe. Don’t have buttermilk on hand? I find myself in the same boat all the time. Simply mix 1 cup milk with 1 tablespoon vinegar or lemon juice and let it sit for a minute or two. This makes sour milk, a great substitution for buttermilk. (Check out more great ingredient substitutions HERE!)
I’ve been dying to share this recipe with you so without further ado…
Here’s the recipe:
- 1¾ cups all-purpose flour
- 2½ tablespoons granulated sugar
- 2½ teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoons sea salt or kosher salt
- 1¾ cups buttermilk
- ½ cup unsalted butter, melted
- 2 large eggs
- 2 teaspoons vanilla extract
- a dash of cinnamon
- Whisk together the flour, sugar, baking powder, baking soda, cinnamon and salt. Make sure there are no clumps.
- In a second bowl, whisk together the remaining ingredients. Whisk the wet ingredient into the dry,making sure not to over mix.
- Brush waffle iron with oil or use cooking spray. Preheat then add the batter according to the manufacturer's instructions .Cook for 2 to 3 minutes, or until the waffle maker indicator light tells you they are ready. Serve immediately, or place in a warm oven to keep warm.

I love that you used to wake up early to make waffles most mornings, but I hate that you went without a waffle maker for six months! How sad! (Says the girl who is currently without a waffle maker and is now contemplating ordering myself one at this moment. Because of course…)
